This is a coffee from Jhoan Vergara at Finca Las Flores. Jhoan Vergara has a new washing station called Penas Blancas that he's used to start processing other producer's cherries to help them achieve higher quality coffee.
Santiago bought this coffee on his trip to Colombia a month ago, and it was one of the selections for a possible competition coffee. The Ombligon varietal has done really well on the world stage in the last few years, including 3rd place in the World Barista Championship in 2023.
It's a washed coffee that exudes qualities of a natural. This process gives us flavours of raspberry, oolong tea, and lychee. It's extremely herbal and really unique tasting!
This coffee really showcases the varietal of Ombligon. Its fruit and qualities really come through in this lot from Jhoan. Ombligon originated in Huila, and currently only really exists in the region of Huila. It has a very unique bean shape. The varietal name directly translates to "belly button", and is characteristic of what the seed looks like. Ombligon is quite resistant to leaf rust and is denser than other varieties, which requires more care when processing at origin.
