This is a fermented natural from Jhoan Vergara at Finca Las Flores in Huila, Colombia. . This one is a special one- it's part of our Apothecary Collection AND a competition lot. Kat just placed 5th in Canada at the National Barista Championship with this very coffee!
This is a naturally processed coffee from a varietal that has a lot more mucilage which creates a lot more sweetness. This coffee was fermented in a bio-reactor, then thermal shocked, then dried in a dehydrator.
Santiago bought this coffee on his trip to Colombia a month ago, and it was Kat's selection for a competition coffee. The red bourbon varietal has its roots and typically has complex floral notes and juicy flavours. This one from Jhoan is no exception!
