This is a experimental process from Jhoan Vergara at Finca Las Flores in Huila, Colombia. This is a special one- it's part of our Apothecary Collection AND a competition lot. Santiago just placed 6th in Canada at the National Barista Championship with this very coffee.
This is a coffee that Santiago and Jhoan worked on together. It starts with the java being processed like a honey process coffee where the mucilage is dried on the coffee seeds. When it's a 18% moisture, it gets rehydrated and mixed with freshly de-pulped Sidra cherries. It goes into a bio-reactor for 72 hours. After this , it receives a thermal shock, then is dried in a dehydrator.
Santiago bought this coffee on his trip to Colombia a month ago, and it was his selection for a competition coffee. The java/sidra varietal has its roots and typically has complex floral notes and juicy flavours. This one from Jhoan is no exception!
