At The Colombian, we buy 90-95% of coffees from Colombia. Every now and then we select a gem from a different origin that we would like to showcase. 
We decided to buy this lot after going to a cupping with Semilla where they told us a story about the social work they are doing in Honduras. They are doing their best to connect smallholders to roasters abroad in order to help producers take their crop to market. This creates more sustainability for producers. 
Danilo Sanchez is a third generation coffee farmer in Honduras who grows coffee with his family. He grows coffee not just because it's tradition but because he is passionate about the crop. After seeing his grandfather and father struggle in coffee because of labour shortages, lack of pay for the crop, he has realized that producing specialty coffee is the best way forward. He has heavily concentrated on producing high quality lots which allows him to create long lasting relationships with importers or roasters abroad who are able to guarantee him better prices for his coffee. In turn, this changes the outlook for his family's future.
This is a very special varietal that has been anaerobically fermented for 50 hours and then fermented for 38 hours before it's washed and dried under the sun. This special varietal is called Paraninema and was developed by the Honduran Coffee Institute to create leaf rust resistance, a high quality cup and good yield potential. It has flavours that tend to be more floral, fruity and very sweet.
