We are offering two exceptional coffees from a producer we have developed a close relationship with, Jhoan Vergara. Santiago asked Jhoan to develop a couple of different coffees for us for competition and these two coffees are the first experiments we have received! 
Process: Experimental
Varietal: Sidra, Java
Tastes Like:Yellow Hibiscus, Lychee, Mango, Pomegranate
This is a special process that we have worked on with Jhoan to develop and we can tell you that it’s clean, fruity, floral and tropical. The process is a secret- at least for now!
Process: Extended Fermentation Natural
Varietal: Sidra, Java
Tastes Like: Blackberry Jam, Guava, Dark Chocolate
This coffee has had an extended fermentation and has been carefully dried to preserve and enhance the flavours in both the Sidra and Java varietals that when blended together creates flavours that are floral and fruity which make this coffee a flavour explosion.
These coffees come from Finca Los Flores which is run by Jhoan and his family. They are very dedicated producers and are always trying to be innovative with the way they produce coffees. They are young producers and we have developed a good working relationship with them. Jhoan Vergara puts an immense amount of effort and care into his coffee. In fact, his farm is one of the most impressive coffee farms Santiago has ever visited.
