Alirio grows Colombia, Caturra, Castillo, and Pink Bourbon across his fully sun-exposed hectares.\u003c\/p\u003e\n\u003cp\u003eThis lot uses Alirio's signature \"Precision Natural\" process, a method he has perfected to achieve a clean cup with intense fruit complexity by blending Pink Bourbon and Colombia varieties. Cherries are rigorously selected at peak ripeness, then undergo a 24 hour oxidation phase in the cherry to concentrate flavour precursors. The coffee then moves immediately to mechanical dryers for 4 to 5 days, halting microorganism growth and giving Alirio full control over water activity and the preservation of delicate sensory notes.\u003c\/p\u003e\n\u003cp\u003eIn 2013, Alirio won the Cup of Excellence, the most prestigious accolade a coffee producer can receive.
