This coffee is a Tabi varietal, which tends to be much sweeter as the trees are bigger and they get a lot more sunlight and nutrients. This is a washed coffee that has had a long fermentation- 18 hrs fermented in the cherries and 6 hours of fermentation post de-pulping. It was then dried on raised beds for 18 days.
